Usage

Whole cloves are a base spice: add them to hot oil or ghee at the very start of cooking to release their volatile oils into the fat, which carries their flavour through the entire dish. Add 2 to 3 whole cloves per cup of rice in biryanis, pulao, and khichdi alongside cardamom and cassia.

Use in curry and gravy tempering — add at the start, remove before serving. Add 1 to 2 cloves to masala chai water before boiling for a warm, spiced depth. Grind fresh from whole for garam masala — freshly ground clove is significantly more potent than pre-packaged ground powder. For traditional oral care, place a whole clove near a sensitive tooth for natural temporary relief.
